I am constantly looking for ways to use my iPad2 in the classroom. It's difficult since I only have one (my own) that I share with my students. It's definitely best to use in small group (2-4) students or one-on-one.
I found a post on Apps in Education by Greg Swanson called "How to Design a Beautiful iPad Lesson". In the post, there is a Scribd version of a lesson ("My Ideal Vacation Spot") provided by Rob Miller. If you don't find this exact lesson useful (even though it is pretty cool), there are definitely components of the lesson that can be taken from it.
